Strawberry Walnut Bread

A wonderfully moist quick bread filled with fresh strawberries, chopped walnuts and a generous dose of cinnamon.
Ingredients
  • 2 cups chopped walnuts
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp salt
  • 4 eggs, beaten
  • 3 cups chopped strawberries
  • 2 cups sugar
  • 1 cup mashed banana (about 3 medium bananas)
  • 1 cup vegetable oil
  • 1 tbsp finely chopped orange peel
Instructions
  1. Preheat oven to 350°F.
  2. Grease two 9" loaf pans and sprinkle the bottom of each pan with a ½-cup of the chopped walnuts. In a large mixing bowl, stir together flour, baking soda, cinnamon, nutmeg and salt.
  3. In a separate bowl, combine the rest of the walnuts with remaining ingredients (everything from the eggs to the orange peel). Gradually stir in flour mixture, about a cup at a time, just until moistened.
  4. Distribute batter evenly into each pan and bake for about 1 hour. The bread is done when a toothpick inserted into the center of the loaves comes out clean.
  5. Remove from oven and allow to cool for 10 minutes before removing the loaves from pans. Cut bread into slices and serve warm or at room temperature.
