Turkish Green Beans

This is one of Judd's favorite recipes, which, with a few simple ingredients, makes for an easy, fresh and vibrant side dish.
Ingredients
  • 2 medium tomatoes
  • 2 medium onions, chopped
  • 2 garlic cloves, chopped
  • ⅔ cup extra-virgin olive oil
  • 1 pound green beans, trimmed
  • ½ cup water
  • ¼ cup white wine (or more water)
  • 1 tablespoon sugar
  • salt and pepper to taste
Instructions
  1. Blanch tomatoes in a small pot of boiling water for about 10 seconds. Using a slotted spoon, transfer immediately to a bowl of ice water to stop the cooking. Drain, peel, and coarsely chop.
  2. Meanwhile, heat olive oil over medium-high heat in a large, wide, heavy pot. Add onions and garlic and cook about 5 minutes until onions have softened. Add tomatoes and cook, stirring occasionally, another 5 minutes.
  3. Add beans, water, wine, sugar, salt, and pepper and bring to a boil. Reduce heat to medium-low, then cover and simmer until beans are tender but slightly crisp, about 30 minutes or to your own taste.
  4. Season with salt and pepper and allow beans to cool. Serve with a squeeze of lemon juice and a dollop of plain Greek yogurt, if desired.
